ABC LEVEL II "ON SALE" PROFESSIONAL SERVER

"Professional Server Training" is customized for employees involved in the sale or service of alcohol in wine tasting rooms, breweries, pubs, bars, nightclubs and restaurants. This course includes all topics in Level I as well as an emphasis on the issues "ON-SALE" servers and sellers face including strategies for preventing patrons from becoming overly intoxicated and refusing service to those that are. This course includes an in depth and hands on analysis of fake ID's to determine authenticity using the 2016 ID Checking Guide book, flashlights, ultra violet lights and magnifying lenses. We also cover techniques for establishing fraudulent use of authentic ID's presented by the underage but belonging to another person who is 21 or over. Additional topics include the interaction between alcohol and drugs (illegal and prescription), metabolic rates of alcohol, individual alcohol tolerance and the effect tolerance has on intoxication, food promotion, identification of the appropriate time to discontinue service, procedures to refuse service professionally and deescalate the patron who becomes argumentative, aggressive or hostile. We understand that refusing service is uncomfortable for many sellers and servers so we encourage participants to engage in the industry specific role playing exercises available in the full 4 hour class to build maximum confidence in this area.
